Ingredients:

kg Water melon

g olives Kalamata Alnatura Origin

tbsp Alnatura Natives extra virgin olive oil

tbsp Alnatura Condimento Bianco dressing

pinches Alnatura sea salt

pinches Alnatura black peppercorns

pinches Alnatura raw cane sugar

g Alnatura feta cheese

sprigs Peppermint

Prepare the vegetables.

Cut the melon into quarters, deseed, remove the flesh from the skin and cut into 1cm cubes. Wash and trim the spring onions and cut into thin rings. Finely slice the olives.

Add the dressing and marinate in the fridge.

Put the diced melon in a bowl with the spring onions and olive rings and mix well.
Whisk together oil, white vinegar, salt, pepper and sugar to make a dressing, pour over the melon and stir. Leave to marinate for 30 minutes in the fridge.

Add the feta and mint and serve.

Crumble the feta cheese. Wash the mint, shake dry, pluck off the leaves and chop roughly. Sprinkle the feta and mint over the salad and serve.
Recipe tip: You could also use basil instead of mint.
