Vegetable Tian with Provencal Tomato Sauce

Ingredients

g aubergines

g mozzarella

Provencal tomato sauce

A few dried herbes de Provence

Preheat the oven to 180°C.

Wash the vegetables, peel the onions and drain the mozzarella.

Chop all the vegetables and the mozzarella into very thin slices, 3 mm thick, using a mandolin slicer.

Take an oven dish, butter the bottom, crush the garlic clove and rub it into the butter.

Next place the vegetables and mozzarella randomly in the dish (arranging them vertically or horizontally, as you prefer).

Pour over 2 tablespoons of olive oil.

Sprinkle on top some salt, black pepper and herbes de Provence.

Bake in the oven for 40 minutes.

In the meantime, heat the Provencal tomato sauce in a pan as it will make an ideal accompaniment for your vegetables.

Serve the Vegetable Tian hot along with the Provencal tomato sauce.
