Preparation time : 10 minutes. Cooking time: 10 minutes. Cook the noodles, following the instructions on the pack, then put to one side. Blend the water with the peanut butter.

Ingredients :

g Asian noodles of your choice

teaspoon peanut butter

ml water

g mushrooms, sliced

leek, washed and chopped into 2cm slices

tablespoons soy sauce

Red chilli, to taste

Fresh mint

teaspoon salted peanuts, slightly crushed
*
Sriracha to taste

Olive oil

Cook the noodles, following the instructions on the pack, then put to one side.

Blend the water with the peanut butter.

Heat the olive oil in a frying pan and fry the sliced leeks and mushrooms for a few minutes over a medium heat until the vegetables start to colour.

Add the soy sauce and a little red chilli along with the peanut butter and water mixture.

Bring to the boil and cook for 5 minutes.

Put the noodles in a bowl or soup bowl then add the soup.

Garnish to taste using red chilli, mint leaves, peanuts and Sriracha.
