Ingredients:

g courgettes

g coconut flour

g flax flour

small onion, finely chopped

teaspoon herb or Guérande salt

mint leaves, finely sliced
To fry the patties:

tablespoons coconut oil

Coarsely grate the courgettes, stir in the salt and chopped onion and leave to macerate for 10 minutes. Place this mixture in a clean tea towel and squeeze tightly to extract all the water from the vegetables.

Stir the remaining ingredients into the courgette mixture. If your batter is a little too dry, add some non-dairy milk.

Using the coconut oil, fry the patties in a frying pan.

Season with salt and serve straightaway.

Optional: Mix together vegan double cream (Frischcreme) with a little olive oil and herb salt to taste.
