Start off by stirring together all the ingredients for the marinade.
Using some kitchen towel, drain the tofu and cut it into small cubes or triangles.
Brush the tofu with the marinade and leave it to stand in the fridge for at least 2 hours.
Finely chop the spring onion.
To create your dish, take a soup plate or a bowl, once again drain the marinated tofu and place it in the centre of the plate or bowl.
Trickle the marinade generously around the tofu and keep any leftover marinade for when you eat the tofu.
Next add the sprouted seeds, sesame seeds and finely chopped spring onion.
As the finishing touch, sprinkle over a little lemon zest and freshly grated ginger.
Tip: sprouted seeds are great nutritional bundles which are packed with vitamins and minerals and which help make raw food easier to digest.
