Ingredients

250
g red lentils, rinsed in cold water
4
medium-size carrots
1
onion
3
cloves of garlic + 1 for the bread fingers

g ginger

ml coconut milk
750
ml vegetable stock

tablespoon red curry paste

Juice of half a lemon

Olive oil

Salt, pepper

Peel the carrots and sauté them with the diced onion for a few minutes

Add the red lentils and the vegetable stock

Cook as indicated on the packet of lentils (the lentils should be cooked and tender)

5 minutes before the end of cooking, add the garlic, the ginger and the curry paste

Mix in, adding the coconut milk and the juice of the half a lemon

Season to taste

Bread fingers

Slice a dark bread lengthwise, e.g. full-grain roll

Lightly toast the batons of bread in a pan with olive oil and a crushed clove of garlic

An easy tip : For a redder, more intense colour, replace 2 of the carrots with a red pepper.
