- Toasted peanuts or pine nuts

Melt the coconut oil and fry the chopped onion, garlic and ginger until they turn translucent.
Add the curry paste, peanut butter, sweet potato cubes and coconut milk.
Cook over a gentle heat, leaving the mixture to simmer away uncovered for about 25 minutes or until the sweet potato has softened. If need be, you can add a little water to stop the curry from becoming too stiff and dry.
Adjust the seasoning.
Serve on a bed of rice, cooked according to the instructions on the packet. Toasted peanuts and baby spinach leaves add a tasty final touch to this delicious curry.
