Ingredients:

g mussels, Bouchot for example

bunch flat-leaved parsley

small celery sticks, cut into julienne strips

medium-sized carrots, cut into julienne strips

small yellow onions, finely chopped

bay leaf

ml dry white wine (Riesling for example)

g fish stock

g cream

knob of butter

Optional, according to your taste:

tablespoon potato starch diluted in ½ glass of cold water.

Sweat the onions in the olive oil. Add the white wine, bay leaf and half the chopped parsley. Add the mussels to the wine before it gets warm and bring everything to the boil. Then lower the heat right down and continue cooking the mussels for 5 minutes. Drain, but keep the cooking liquid.

Remove the mussels from their shells and put to one side.

In a pan, sweat the carrots and celery in a knob of butter. Add the mussel cooking liquid through a sieve along with the fish stock and reduce over a medium heat for about 30 minutes. Add the cream and continue cooking for a further 10 minutes, taking care not to let the soup come to the boil.

Optional: After, the soup has been cooked twice, you can either leave it as it is or thicken it by adding a tablespoon of starch dissolved in water.

Before serving the soup, season it to taste, add the cooked mussels, heat for 2-3 minutes, add the remaining chopped parsley and serve.

Handy tip: You can make the soup the day before and then simply complete the final stage when you want to serve it. This soup is an ideal dish for end-of-year festivities, for example, as a starter.
