Rocket Muffins with Feta Cheese and Olives

slices French toast Alnatura
tablespoons olive oil Alnatura
teaspoon thyme Alnatura
eggs Alnatura
Freshly ground black pepper Alnatura

Preheat the oven to 200°C

Roughly chop the rocket and olives

Cut the Feta cheese into 12 cubes

Trim the crusts off the French toast

Brush both sides of the French toast with olive oil and carefully press the slices into the cups of a muffin tin

Divide the olives equally and season with thyme

Break one egg into each cup of the muffin tin, keeping the egg yolk as intact as possible

Place a Feta cube into each cup

Bake for 15-20 minutes in the oven

Remove the muffins from the mould, sprinkle over the chopped rocket and add a twist of freshly ground black pepper

Serve hot

Tip : For these muffins, it’s best to use size S small eggs. For even greater flavour, you can sprinkle small pieces of chopped olive over the muffins.
