Roast Chicken Pieces with Caramelised Hazelnuts

Ingredients

Chicken marinade

chicken pieces (breasts, thighs or a whole chicken cut into pieces)

red onions, roughly chopped

Olive oil

tablespoon grated fresh ginger
1/2
tablespoon ground cinnamon

Juice of one lime

Black pepper
*
Guérande sea salt

Leave to marinate – ideally overnight, but 2 hrs minimum
Paste for coating the chicken at the end of cooking

g hazelnuts
70
g Luxembourg honey
100
g roughly chopped and toasted hazelnuts

Preheat the oven to 180°C.

Transfer the chicken pieces to an oven proof dish and roast in the oven at 190°C for 30 minutes.

Remove the dish from the oven and spread the honey and hazelnut mixture over the chicken pieces. Cook for another 5-10 minutes until the chicken is cooked and the hazelnuts have turned a lovely caramelised colour.

Ideas to accompany the chicken : Fresh tagliatelle, plain risotto or a nice seasonal salad.
