Dice up the dried tomatoes into tiny cubes and mix with a few drops of balsamic vinegar
Combine the butter and mayonnaise
Spread a thin layer of this butter and mayonnaise mixture over the three slices of bread
Garnish 2 of the bread slices with the rocket salad and 3 slices of roast beef
Scatter the dried tomatoes and pine nuts over the sliced roast beef
Assemble your sandwich – placing the third unused slice of bread on top with the butter and mayo side facing down so that it sticks to the roast beef below.
