Ingredients:

Fish:

g red tuna fillet

tablespoon soy sauce

Sauce:

4 sprigs of tarragon leaves

3 sprigs of thyme leaves

tablespoon grain mustard

ml wine vinegar

ml olive oil

Chop the tuna into pieces (approximately) 8 cm long and 3 cm.

To make the marinade, combine the olive oil, salt and pepper, soy sauce and paprika. Brush the tuna with this marinade and leave it in the fridge for 2-3 hrs (covered or wrapped in cling film). Make the kebabs by threading the fish onto wooden skewers.

For the sauce, place all the ingredients in a blender, and blend until you get a smooth sauce, and if necessary, adjust the seasoning and consistency.

Take your tuna kebabs out of the fridge and grill them straightaway using a very hot griddle pan. Sear the top and bottom for 30 seconds on each side.

Serve the kebabs on a dish, accompanied by the sauce.

Handy tip: This dish also makes a great starter, served with a small seasonal salad.
