Ingredients:

Quetsche plums

cm fresh ginger or hogweed roots

red onion

ml red wine vinegar
300
ml filtered water

g organic unrefined cane sugar
1
teaspoon salt
3
bay leaves
10
eppercorns
1
tablespoon juniper berries

Bring all the ingredients to the boil, except the plums.

Cut the plums into quarters and place in a glass jar.

Next, pour the hot liquid over the plums, leave to cool before closing the jar tight and storing it in the fridge.

Wait 1 week before you eat the pickled plums.
