Vegetarian dish. Peel the shallot and cut into thin slices. Marinate in the vinegar and chill.
Dice the tomatoes, cucumber and onion.
Add the lime juice, olive oil, parsley, mint, Ras el Hanout, salt and pepper and then combine.
Grate the cauliflower into the mixture (using a large hole grater).
Stir all the ingredients and adjust the seasoning if necessary.
Leave for an hour in the fridge to macerate before serving.
Tip : Tabouleh makes an excellent, handy snack to take with you to work.
