Ingredients:

whole rabbit, cut into pieces

Olive oil

garlic clove, finely chopped

potatoes, medium-sized, peeled and sliced

small glasses of water
2
glasses white wine (dry Riesling)
3
shallots, thinly sliced
3
tablespoons mustard
5
sprigs fresh thyme

Guérande sea salt

Optional: organic vegetable stock cube

Heat the olive oil in a large saucepan. Then add the rabbit pieces and brown. Once the meat is browned, season it to taste and put to one side.

Sweat the shallots and then deglaze them using the white wine. Continue cooking over a medium heat.

Add the water, mustard, garlic and fresh thyme. Stir thoroughly and remove the pan from the heat. Season to taste.

Place the rabbit pieces and potatoes in an ovenproof dish.

Cook in the oven for about 50‒60 minutes at 170°C, covering the dish with a sheet of baking parchment.

Tip: When cooked, turn on the oven grill to brown the top of the dish (first remove the baking parchment). If your sauce is too runny, dilute 1 tablespoon corn starch in water and add to the sauce.
