Ingredients:

g Alnatura quinoa, mixed

l Alnatura vegetable stock

cucumber

g cherry tomatoes

g Alnatura Origin green olives

g fresh coriander

tbsp Alnatura extra virgin olive oil

tbsp Alnatura lemon juice
Alnatura sea salt
Alnatura ground black pepper

Rinse the quinoa in hot water to remove the bitter coating. Prepare the vegetable stock according to the instructions on the packet and cook the quinoa in it for 10-15 minutes. Then drain through a sieve.

Peel and dice the cucumber, onion and avocado. Halve the cherry tomatoes. Destone the olives and chop.

Put the vegetables in a bowl, add the quinoa and mix everything together carefully.

Finely chop the chilli pepper and coriander.

Make a salad dressing from the oil, lemon juice, chilli, coriander, salt and pepper. Pour the dressing over the salad and mix well.
