Ingredients

Pizza dough
250
g sweet potatoes, peeled and diced

Cooking salt

g potato flour

Guérande sea salt, freshly ground black pepper

Olive oil
For the topping

figs, very ripe

g fresh ricotta

g walnuts

g rocket

Olive oil

Cook the sweet potatoes in salted water for about 15 minutes until soft. Drain and leave to cool.

Using a fork, mash them and then add seasoning and the potato flour. You should have a nice, smooth dough which does not fall apart.

Take a frying pan that has been greased with olive oil and spread the dough over the bottom

Cook on both sides over a medium heat for about 3-5 minutes.

Once your base is cooked, add the toppings of your choice:

Rocket, ricotta, walnuts, figs and a drizzle of olive oil.

Useful to know: You can use this pizza base dough all year round, you’ll just need to change your toppings.
