Peel and core the Pink Lady apple and finely dice.
Finely dice the salmon.
Peel the shallot, wash the chervil and chives and finely chop.
Stir the diced salmon into the mixture of finely diced Pink Lady apple, finely chopped shallot and chopped herbs.
Season with salt and freshly ground black pepper.
Finish off by adding the mustard, horse radish sauce and lemon juice.
Serve on a slate dish with fresh baby salad greens.
