Ingredients:

For the fish:

g cod fillet

For the topping, combine:

tablespoon olive oil

garlic clove, chopped

Zest of half a lemon

bunch flat-leaved parsley

g Panko breadcrumbs

Brush the fish fillets with olive oil.

Lightly season and then cover with a generous layer of topping, pressing it down firmly.

Place the fish in an ovenproof dish. After 5 minutes in the oven, add the cherry tomatoes, sliced garlic, and bay leaves. Bake for a total of about 15 minutes at 190°C. The topping should turn golden and crunchy, and if necessary finish it off very carefully under the grill.

There’s no need for any sauce, a drizzle of olive oil will give this simple tasty dish a final touch.
