Wash, clean and slice the celery and spring onion. Clean and peel the carrot, and similarly cut into thin slices
Whisk the oil and lime juice together and season with cumin, cinnamon and salt. Wash the mint, shake well to dry, and chop into thin strips. Mix all the prepared ingredients together in a bowl and season to taste with salt.
