g fresh salmon, cut into smallish cubes (0.5cm)

avocado, for presentation, sliced

slices bread, quite large, toasted and halved

A few thin slices fresh mango

Lettuce of your choice (Iceberg for example)

For the horseradish mayonnaise. Blend together:

small teaspoon mustard

teaspoon horseradish

teaspoon apple cider vinegar (for example)

ml olive oil whisk up your mayonnaise by slowly adding

Combine the salmon, beaten egg, spring onions, flax seeds, lemon zest, dill and then season. Once these ingredients have been combined, add the avocado cubes to avoid bruising them.

Shape the salmon burgers so they are about 3cm thick and cook in a large non-stick frying pan on both sides for about 3 minutes. They should be golden-brown and slightly crispy on the surface.

To assemble the burgers: Spread a layer of horseradish mayonnaise over the sliced bread. Place the lettuce on one half slice of bread, add the burger, sliced mango and avocado. Place the second slice of bread on top, adding a little watercress if you wish.
