Rinse and cook the quinoa, following the instructions on the pack.

To make the sauce, combine all the sauce ingredients and then stir in the quinoa and combine thoroughly

The quinoa will form the basis for your Bowl, so place it in the bottom of a dish.

Blanch the green cabbage leaves in salted boiling water for 3 minutes, remove from the heat and plunge the cabbage into cold water, wipe dry and then slice very thinly.

Cut the carrot into very thin strips using a vegetable peeler.

Chop up the remaining vegetables and mango how you like them and arrange on top of the quinoa.

Add colour and glow to your bowl with a light drizzle of olive oil, and possibly a touch of lime juice.

The quinoa’s refined flavour works by bringing out all the natural flavour of the fruit and vegetables.
