Preheat your oven to 180°C.
To make the mini buns: in a large bowl, using a mixer with the dough hook attachment, mix together the oat bran, flour and baker’s yeast dissolved in the water, which should be warm and not boiling, until you have a nice, smooth dough.
Next cover the bowl with a damp tea towel and leave the dough to rise for 45 minutes.
Then shape the dough into mini buns (±80g) and sprinkle them with the poppy seeds.
Leave the buns to stand at room temperature for 30 minutes so that they rise for a second time.
Then bake in the oven for 10 to 12 minutes until they start to turn a slight golden brown.
In the meantime, cook the turkey breast in a frying pan with a drizzle of oil.
To finish, make up the mini burgers adding whatever filling ingredients you like.
