Ingredients

For the Kniddelen:
100
g wheat or buckwheat flour

egg

ml milk

Guérande sea salt

Freshly ground black pepper
For the vegetables:

Olive oil for cooking

g celery

g peppers

g courgettes

g red onion

garlic clove

To make the Kniddelen dough, mix together the double cream, milk, egg, salt and pepper and then add the flour

Using a wooden spatula, combine the ingredients thoroughly for about 2 minutes

Fill a saucepan with lightly salted water and bring to the boil

Dip a tablespoon into the boiling water and use it to shape the dough into quenelles (small oval-shaped dumplings) and then gently slip them into the water

So that your Kniddelen are cooked evenly, it’s advisable to cook them in “batches” of 6 to 8

The Kniddelen will take +/- 6-8 minutes to cook, depending on their size and which flour you use

Chop up your vegetables into “ready-to-eat” chunks

Using your grill pan, grill the dumplings and vegetables in some olive oil

Stir them well

Arrange on plates and drizzle over a dash of olive oil

To serve this fabulous dish, season with a little Guérande sea salt and freshly ground black pepper
