Ingredients

g tomatoes, different colours and varieties

g cherry tomatoes

g tomato purée

g olive oil

g lime juice

shallot, finely chopped

garlic clove, grated

Salt, black pepper

g cooking salt

g pumpkin seeds

g feta mixed with a little olive oil

Mix the cherry tomatoes with a little olive oil and season with salt and black pepper.

Roast in the oven at 180°C for +/- 15 minutes to intensify the taste of the tomatoes.

Cut the other tomatoes into thick slices.

Add the crumbled feta

Make up the vinaigrette dressing by combining:
he tomato purée, olive oil, lime juice, shallot and garlic.
Season with salt and black pepper

Tips : Serve cold as an accompaniment for summer dishes or as a supper dish with a slice of toast.
