With a  mushroom and goat cheese bruschetta

Ingrédients

For the cocktail:

cl Appleton Estate Reserve Rum
2
cl cane sugar syrup

cl lime juice
3
cl cream or yoghurt
Kiwi fruit
Mint
Ice cubes
Pour le bruschetta:
250
g brown mushrooms
1
baguette
1
garlic clove
1
tbsp balsamic vinegar
Olive oil
Salt
Freshly grounded black pepper
Fresh parsley
100
gr fresh goat cheese

Cocktail preparation:

Peel the kiwi and cut into small pieces. Halve the lime and squeeze out the juice. 

Put all the ingredients in a blender with the ice cubes and mix to a creamy consistency.

Serve immediately, garnished with mint leaves.

Bruschetta preparation:

Cut the baguette into 2 cm thick slices. 

Halve the garlic clove and rub the baguette with it.

Heat up olive oil in a pan and fry them on both sides.

Slice the mushrooms. Fry them in a non-stick pan and deglaze with balsamic vinegar. Add salt and pepper.

Spread the mushroom mixture onto the baguette slice and garnish with crumbled goat cheese. Chop fresh parsley to decorate.
