Ingredients (for 1 loaf)

medium-sized potato
g wheat flour type 405 (all-purpose)
packet of dried yeast
tsp sea salt
tbsp olive oil
Lukewarm water
tomatoes (fresh or tinned)
Other herbs to taste

Peel and dice the potato, cook in a little boiling salted water and mash with a fork.

Mix the flour, yeast, 2 tsp sea salt, 4 tbsp olive oil, water and mashed potato, including the liquid, to a moist,sticky dough.

Leave to rise in a warm place until it starts to bubble.

Put the dough in a large round, greased tin, pour over 2 tbsp olive oil and spread it out with your fingers.

Chop the tomatoes, spread the pieces over the dough and press in lightly.

Sprinkle with 1 tsp sea salt and the oregano and drizzle with 1 tbsp olive oil.

Preheat the oven to 230 °C. Put the focaccia in the oven and cook for about ½ hour.
