Preparation time : 20 minutes. Cooking time: 15 minutes + 8 minutes. Dice the sweet potato into cubes and mix with the olive oil, Guérande sea salt and freshly ground black pepper. Bake in the oven at 200°C for about 20-25 minutes until the sweet potato turns a brownish colour.

Useful to know : You can make these tartlets in advance; it takes no time to assemble them at the end. If you don’t have a tartlet tin, you can also cut out circles or squares and fold the edges over.

Ingrédients :

g cod fillet, boneless and thinly sliced

Dice the sweet potato into cubes and mix with the olive oil, Guérande sea salt and freshly ground black pepper. Bake in the oven at 200°C for about 20-25 minutes until the sweet potato turns a brownish colour.

Based on the size of your tartlet baking tin, cut out circles of puff pastry.

Bake the circles blind for +- 15 min at 180°C, placing greaseproof paper and dried beans on top of them.

Mash the sweet potato and stir in the cottage cheese and Noilly Prat. Season.

Combine the fish, tarragon and lime zest – and season.

Place the sweet potato mixture over the bottom of the tartlets and then fill the tartlets with the fish, taking care to press it down inside.

Bake in the oven for +- 8 minutes at 180°C.

In the meantime, take a frying pan and brown the scampi. Slice and season them and then once cold mix them with the shrimps. If necessary, adjust the seasoning.

When you take the tartlets out of the oven, garnish them with the scampi and shrimp mixture and serve with a green salad.
