Duo of Salmon Tartar and Flaked King Crab with Wasabi-Flavoured Avocado Mousse

Ingrédients:

gr bone-less salmon steaks

gr king crab meat
avocado, ripe

gr mayonnaise

wasabi paste

Olive oil

Blend the avocado with half the double cream, some salt and wasabi paste until you have a nice, smooth mousse.

Combine the crab meat with the mayonnaise, some freshly squeezed lemon juice and chopped chives and place in the fridge.

Finely dice the salmon and marinade it in the olive oil, freshly squeezed lemon juice, salt, freshly ground black pepper, finely chopped chervil, chives and onion tops.

To serve use a pastry cutter to neatly arrange one portion of salmon tartar then one of flaked crab on a plate, and finish off with a serving of avocado mousse.

<p>Serve decorated with a few drizzles or drops of double cream.</p>
