Ingredients

bunch parsley

g baby carrots

“mini-romana” lettuce

g “penne rigate” wholemeal pasta Alnatura

g “curry-mango-papaya” flavour spread Alnatura

tablespoons lemon juice Alnatura

g chicken breast

g pine nuts Alnatura

Chop the parsley very finely

Halve the carrots

In a large bowl, combine the carrots and olive oil

Roughly chop the lettuce

Cooked the pasta in salted water until al dente

Drain in a sieve and leave to cool down

Pour the lemon juice and spread into a large bowl, and using a whisk beat together to make a salad dressing

Add the pasta to the dressing and stir thoroughly

Grill the chicken breasts for 2 minutes on each side over direct heat

Then leave them to gently cook for 10 minutes over indirect heat

Grill the carrots over direct heat until nice and crunchy

Slice the chicken breasts very thinly and chop the carrots into chunks of about 2 cm

Stir together the pasta, sliced chicken, lettuce and carrots

Garnish with the pine nuts and chopped parsley
