Prepare the vegetables and feta
Clean, wash and remove the ends of the zucchini and aubergine. Cut both into 1 cm cubes. Halve the pepper lengthwise, remove the core, wash and similarly cut into 1 cm cubes. Peel the onion and slice into fine rings. Wash the tomatoes and cut into slices, removing the stalk and stalk base. Crumble the feta.

Prepare the vegetable mix
Mix the zucchini, aubergine and pepper cubes in a bowl together with the olive oil, salt, pepper and herbes de Provence.

Cover the bread
Preheat the oven to 200 °C top/bottom heat. Spread 1 tbsp. of pesto rosso over each pitta bread. Cover with the tomato slices and spread the vegetable mix over the top. Finally, decorate with the onion rings and scatter the feta over the top.
