Ingredients

ml Alnatura soya rice drink, unsweetened

tsp curry powder (mild)

tsp Alnatura Shoyu soy sauce
1
pinch Alnatura cane sugar

Prepare the vegetables and tofu : Peel and finely chop the onion and garlic. Clean and wash the pepper, and cut into strips. Clean and slice the mushrooms. Clean and wash the broccoli, and cut into small florets. Cut the tofu into 1 cm cubes.

Fry the vegetables and tofu: Heat the sesame oil in a large pan or wok and fry the tofu cubes over a medium heat for around 5 minutes, stirring frequently. Add the vegetables, season with salt (approx. ½ tsp) and pepper (approx. ¼ tsp) and sweat over a medium heat for around 7 minutes, stirring occasionally, until al dente. Dust with the flour and sweat for approx. 3 minutes.

 

Stir in the soya rice drink and bring to the boil before removing from the heat. Season the creamy tofu vegetables with salt (approx. ½ tsp), pepper (approx. ¼ tsp), curry powder, soy sauce and cane sugar.

Chef’s tip: A mild sesame oil is perfect for this dish. And basmati rice is an excellent accompaniment.
