Comfrey fritters

Ingredients:

comfrey leaves

tablespoons olive oil

egg

g flour

ml beer

Salt and pepper

g goat’s cheese

Make up the fritter batter by mixing together the egg yolk, stiffly beaten egg white, flour, beer and one tablespoon of olive oil. Season with salt and pepper.

Combine the goat’s cheese with the remaining olive oil and season lightly with salt and pepper.

Spread this mixture over a leaf and cover with a second comfrey leaf.

Using a rolling pin, very lightly flatten the leaves, dip them quickly in the batter and then fry them either in a frying pan (or deep fat fryer).
