cod fillets, each weighing +/-150 g
pink grapefruit
piece fresh ginger, +/-1 cm
olive oil
salt and black pepper
pink peppercorns

Preheat your oven to 180 °C

Peel 1 grapefruit and 1 orange, removing all the pith

Next supreme the fruit by cutting away the segments, taking care to remove the membranes to avoid any bitterness

Squeeze the juice from the remaining 1 orange and 1 grapefruit

Peel and finely grate the ginger

Place the cod fillets onto some greaseproof paper

Drizzle olive oil over each parcel

Season with salt and black pepper, add the ginger

Pour over the grapefruit/orange juice

Arrange the citrus segments around the cod

Seal the parcels carefully and place them in an ovenproof dish

Bake in the oven for 20 minutes

When ready to serve, sprinkle with the pink peppercorns
