Handy tip: If you make the shots a day in advance, the flavour will be even better-balanced and more harmonious. Depending on the season and availability, the strawberries can be replaced with other fruit (pear, apple or a vegetable of your choice).

 

Ingredients:

g beetroot, cooked

g strawberries

tablespoon olive oil

sprigs fresh rosemary

tablespoon parsley

teaspoon balsamic vinegar

Pepper and salt to taste

ml cold water

Chop the beetroot into slices about 1 cm thick. Combine with the olive oil, vinegar, salt, pepper and fresh rosemary.

In a frying pan, over a medium heat, fry the beetroot until it starts to colour, but without overcooking it. Leave to cool down.

Next, blend all the ingredients, and if necessary, add more water to get a thick but runny consistency. Adjust the seasoning.

Leave to cool in the fridge.

Serve nice and cold, in small glasses with an ice cube.
