Ingredients:

For the Picanha:

3-4 slices beef Picanha per person

Guérande sea salt

Optional: freshly ground black pepper, Chimichurri spice mix
For the salad:

slices fresh pineapple, cut into pieces

A few green leaves (e.g. lambs’ lettuce leaves)

avocado, sliced

cherry tomatoes, halved

small red onion, sliced

Fresh coriander leaves

Sweet potato slices, already roasted and seasoned
For the dressing, mix together:

Juice of lime

tablespoon honey

tablespoons olive oil

Freshly ground black pepper
*
Guérande sea salt

For the salad: Arrange these ingredients so they look attractive on a serving dish.

For the dressing: Drizzle the dressing over the salad arranged on the serving dish.

For the meat: Remove the meat from the fridge 1 hour before you want to cook it.

Preheat a frying pan or grill to a high temperature.

Cook the meat at a high temperature on both sides, without any fat or seasoning.

How long you cook the beef will depend on its thickness and how you like it.

Leave the beef to rest for 5 minutes and add salt before you serve it.

In South America, this meat is eaten with salt only. If you prefer, you can season it with pepper too.
