BBQ Tofu and Veggie Skewers

Ingredients

g firm or extra-firm tofu

tbsp raw apple cider vinegar

tbsp tomato paste

tbsp olive oil

tbsp maple syrup

garlic clove, minced

tsp sea salt

tsp each paprka, smoked paprika, cumin, coriander, thyme and basil

If your tofu is in a water solution you have to press and drain it so it retains its shape. Press the tofu block on a hard surface covered with some paper towels. Cover the tofu with some more paper towels and place a heavy plate or pan on top. Wait 15 to 30 minutes for the paper towels to absorb the excess water.

In the meantime prepare the marinade. Mix the rest of the ingredients in a medium sized bowl.

Once the tofu is dry, slice it into cubes. Add the cubes to the marinade, making sure all of them are well covered with it.

Let the tofu sit in the marinade for about 30 minutes or longer if you can.

Thread the tofu with some vegetables on to skewers. Grill for about 10 minutes, checking on it frequently not to burn.

Serve with some fresh salad.
