Ingredients

g Bacalhau (salt cod)
300
g potatoes

g Portuguese cabbage

24 hours before you start preparing this dish, you will need to soak the Balcalhau. Cut it into 4 large pieces and rinse under cold water to get rid of any excess salt. Place in a container and cover with cold water. Keep the container in the fridge, changing the water every 4 hours for 1 day.

Tear off the cabbage leaves and wash thoroughly. Discard the stalk.

Peel the potatoes and cut into large cubes.

Fill a pan with salted water and bring to the boil.

Add the potato cubes and cook for about 15 minutes.

Next add the Balcalhau and leave to simmer for 15 minutes.

Finally, add the cabbage and cook for a further 10 minutes.

While the fish is cooking, peel and very finely chop the garlic cloves.

Arrange the potatoes, cabbage and Bacalhau on individual plates.

Garnish by adding olive oil, vinegar and garlic to taste, then season with some freshly ground black pepper.

Serve immediately.
