Preheat the oven to 100°C
Prepare your vegetables by mixing together the carrot, fennel, garlic, olive oil, lemon juice, black pepper and salt
Leave for a few minutes to macerate and then drain
Place half the mixture on one sheet of baking parchment or greaseproof paper
Cut the cooked potatoes into thick slices and place on top of the vegetables
Place the fish fillet on top of the bed of vegetables
Close the paper tightly by folding over each edge twice
Bake in the oven for about 25 minutes – touch the fish to check that it has cooked through
To serve, simply open up the parcels or use a spatula to transfer the fish and vegetables onto a plate
Tip : Prepare these parcels in advance so that you can spend more time with your guests.
