Ingredients:

g Rapunzel green lentils from Germany

shallot, peeled

Peel from 1 lemon

bay leaf

tbsp medium-sharp mustard

tsp Rapunzel Grade A maple syrup

Rapunzel sea salt

Ground green pepper

tbsp Rapunzel extra virgin olive oil, fruity

tbsp lemon juice
2
ripe avocados, diced
2
apples, thinly sliced

Soak the lentils for about 1-2 hours

Put the lentils in a pan with the shallot, lemon peel and bay leaf and boil in three times the same volume of water for about 30 minutes.

Drain the lentils, remove the shallot, lemon peel and bay leaf and season the lentils with salt.

Mix the mustard with the maple syrup, salt and pepper.

Ajouter l’huile d’olive et le jus de citron, remuer et répartir sur les dés d’avocat. Ajouter les tranches de pomme et les lentilles et mélanger le tout.

Add the olive oil and lemon juice, stir and pour over the diced avocado. Add the apple slices and the lentils and mix together thoroughly.
