Ingredients

packet of Alnatura veggie burger mix
250
ml water
100
g carrots
4
sprigs of fresh mint

chilli pepper

egg

tbsp ghee

leeks
1
tbsp ghee

tsp raw cane sugar

g peanuts

tbsp sweet and sour sauce

Put the veggie burger mix in a bowl and pour over 250 ml water. Leave to swell for 15 minutes.

Peel the carrots and chop finely.

Halve the chilli pepper, remove the seeds and chop the flesh finely.

Finely chop the mint.

Mix the carrots, chillies, mint and egg thoroughly into the burger mixture and shape it into eight burgers.

Heat 2 tbsp ghee in a frying pan and cook the burgers over a medium heat for 5 minutes on each side.

Halve the leeks, wash them and cut into thick slices at an angle.

Heat 1 tbsp ghee in a frying pan and cook the leek for 5 minutes, stirring.

Add the sugar and peanuts and quickly stir together. Add sweet and sour sauce to taste.

Serve the leeks with the Thai veggie burgers.
