Ingredients for 6 portions

ml coconut milk
400 ml
ml rice drink

tbsp raw cane sugar

packet of Bourbon vanilla sugar

pinch of sea salt

g milk rice

g coconut flakes
Mixed fruit, e.g. papaya, melon, bananas, star fruit
Juice of ½ lime
Lemon balm leaves to garnish
Alnatura mango sauce for dipping

Put the coconut milk, rice drink, cane sugar, Bourbon vanilla sugar, salt and milk rice in a pan and bring to the boil.

Simmer over a low heat for 45 minutes, stirring occasionally. Leave to cool.

Toast the coconut flakes in a pan over a medium heat with no fat until golden-brown. Leave to cool.

Cut the fruit into bite-sized pieces or slices. Drizzle with lime juice.

Take spoonfuls of the rice mixture and shape into small rolls.

Coat the rice rolls in coconut flakes and place the fruit on top. Serve the sweet sushi with the mango sauce.
