Potato and sauerkraut purée with caramelised apples

Ingredients:

For 4 servings

g Alnatura sauerkraut

ml Alnatura apple juice

Alnatura bay leaves

cloves

allspice berries

g potatoes

g apples

Icing sugar

g whipped cream

g crème fraîche
1
small bunch of chives

<p>Put the sauerkraut in a sieve and rinse with water to remove the sourness from it.</p>

<p>Cut the onions into thin rings and sauté in 1 tsp butter until translucent.</p>

<p>Add the sauerkraut, then the apple juice and spices and simmer over a medium heat.</p>

<p>Peel the potatoes and cook in plenty of salted water.</p>

<p>Peel the apples, decore and cut into slices about 1 cm thick.</p>

<p>Sprinkle icing sugar on both sides of the slices so that they caramelise when cooked.</p>

<p>Melt 1 tsp butter in a pan and fry the apple slices.</p>

<p>Press the cooked potatoes through a potato ricer and mix with the sauerkraut, cream and crème fraîche.</p>

<p>Cut the chives into little pieces and stir into the mixture.</p>

<p>Arrange alternate layers of apple slices and potato and sauerkraut purée, finishing with an apple slice.</p>
