Ingredients:

Dough (for one 26 cm springform tin)

g spelt flour, type 630

g onion lard

Topping:

medium red onions

large, firm pears

tbsp olive oil

g sour cream

eggs

g Emmental cheese, grated
Sea salt, black pepper
Nutmeg, grated

Knead all the ingredients for the dough into a pastry dough using the dough hook of a food mixer.

Press the dough into the springform tin, pierce a few times with a fork and bake blind at 180 °C for about 10 minutes.

For the filling, cut the onions into thin slices. Remove the core from the pears and cut them into strips. Heat the oil in a pan and brown the onions and pears in it for 4 minutes. Drain the contents of the pan on kitchen paper and spread into the prepared pastry case.

Stir the sour cream, eggs, cheese and seasoning to make a smooth mixture. Spread the cheese filling evenly over the onions. Bake the quiche for 30 minutes at 180 °C.
