20% buckwheat flour and 80% wheat flour are the main ingredients in this hand-crafted farmhouse loaf, which has an extremely crunchy crust and toasted flavour. The buckwheat flour is of course what makes this bread special: an age-old cereal full of high quality proteins and non-irritant, soluble fibre, which will help you feel nice and full while lowering your blood sugar and cholesterol levels. Since buckwheat flour does not contain gluten, it cannot be used to make bread on its own; however, once added to wheat flour or a gluten-free mixture, it’s ideal for bread making.
