Ingredients

For 12 muffins

ml Alnatura apple juice

g Alnatura raisins

g Alnatura whole almonds

Seeds of 1 Alnatura vanilla pod

g Alnatura wheat flour type 405 (pastry flour)

tsp Alnatura cream of tartar baking powder

ml Alnatura long-life alpine milk, 3.5%

Icing sugar for dusting

Heat the apple juice, soak the raisins in it for about 30 minutes.

Meanwhile, roughly chop the almonds, wash the apples and remove the core.

Dice the apples and fry with the almonds in a large pan in 1 tbsp melted butter until golden-brown.

Line the cups of a muffin tin with paper cases.

Using a hand blender, beat the rest of the butter with the sugar, cinnamon and vanilla seeds in a large bowl until foaming, then gradually stir in the beaten eggs.

Mix the flour with the cream of tartar and sift in.

Then add the milk and mix everything together to form a smooth dough.

Preheat the oven to 180 °C.

Drain the soaked raisins and mix with the fried apples and almonds.

Add half this mixture to the muffin dough.

Divide the dough between the paper cases.

Spread the rest of the fried apple mixture over the dough.

Bake the muffins in a hot oven for about 30 minutes until golden-brown.

Remove and leave to cool on a wire rack.

Sprinkle with a little icing sugar if you wish.
