Chickpea salad with roasted cauliflower

Ingredients:

jars of Alnatura chickpeas
400
g cauliflower

tbsp Alnatura olive oil

small red onions, cut into thin rings
1
bunch of flat-leaf parsley, finely chopped

tbsp Alnatura lemon juice
1,50
tsp Alnatura curry powder
Alnatura sea salt
Alnatura pepper

Rinse the chickpeas in cold water and leave to drain.

Break the cauliflower into florets, and cut these into small pieces. Brown in a frying pan with 3 tbsp oil for about 3-5 minutes.

Mix the cauliflower and chickpeas in a bowl.

Stir in the onions and parsley.

And the rest of the oil, the lemon juice and curry powder and marinate the salad.

Leave to stand for 10 minutes. Season with salt and pepper.
