Cut the peppers into quarters, remove the seeds and grill for 10-15 minutes, turning occasionally.

For the patties, finely dice the onion and garlic and sweat in the olive oil. Peel the carrots and cut them and the celery into small pieces. Add them to the pan and heat for a further 5 minutes.

Drain the chickpeas and blend to a fine purée in the mixer. Put the softened vegetables in a bowl with the chickpea purée and stir in the cornflour.

Chop the parsley and stir in. Season to taste with salt, pepper, cayenne pepper and curry powder.

Form the chickpea mixture into 8 long patties, using wet hands. Brush lightly with oil and grill until golden-brown.

Toast the rolls under the grill on both sides, cut in half and spread with barbecue sauce. Top with a lettuce leaf, a patty, grilled pepper and onions. Serve with rocket and a few red beet crackers.
