Ingredients:

500
g chicken breast
1
red pepper
3
shallots
2
cm ginger
Oil
1
tin of coconut milk
10
dried apricots
2
bananas
1
tsp cinnamon
1
tsp coriander
Salt and pepper
1
bunch of basil, fresh
Rice

Cut the prepared meat into strips, roughly chop the pepper (or for a fruity alternative, pineapple) and shallots, finely chop the ginger.

Brown everything in a little oil in a large frying pan or wok.

Deglaze with coconut milk, add the chopped apricots and sliced bananas and season with cinnamon, coriander, salt and pepper to taste.

Finally stir in the freshly chopped basil. Serve with rice.
